I got a press last yr and it's time to use it. My question: do I just chop the apples or should I grind them?

We used to know a family that owned a big commercial hydraulic cider press. They bought apples by the ton to press and it was delicious cider. They had these big shallow trays with screen bottoms where they spread the ground pomace, layered it all between press cloths to set into the press maybe 1-2' tall. Then the beautiful golden cider would gush from the sides as the mass was compacted. Anyway, from that experience, I think grinding would be your most efficient extractor of juice when pressed. Maybe breaks more cell walls? Does your press have a grinder attachment like I've seen on some presses?

I wonder if they could be frozen first? Then thawed and pressed. That's the way I do crabapple when making jelly, though I throw the frozen apples into a kettle with a little water and then boil. Quite a different process, but maybe the method could be useful.

I've done that with tomatoes, so why not? Do you have enough freezer space?

SUCCESS!!! I cut the apples in half and tossed them in the food processor. When all were done, put them in the cider press...excellent. I did can some just to compare taste. I will probably do more after all the apples are picked.

I cut the apple in half, pulled out the stem and tossed them in the food processor. If the center looked bad, I cut it off. There was a fine bag that came with the press that I used.

When we used to dry apple slices for our meat rabbits, we also made a lot of apple sauce, canned strained juice from ground apples, and then froze containers of pulp for our chickens.. Pretty much maximum use from the fruit..
