New around here and new to canning. Processed some potatoes and when I pulled them out after they were done I immediately realized I forgot to put water in the quarts 🤦♂️
Cheap mistake but curious of the Implications of this.
for the record I'll be redoing it but raised a question for me. I know dry canning vegetables is not a good idea they say due to heat transfer....however with potatoes having its own moisture if that makes any difference with them.

Potatoes are low acid. they will need to be pressure canned. the ones you have done, I think I would freeze if you could. Canning twice they may only be good for mashed potatoes due to the texture.

I see people online (FB) doing that on purpose all the time. They like it. So maybe don't re-do them all and see if it works out for you. It's not a USDA-approved thing.....but some people are willing to try it. I haven't and won't, in case you're wondering. But If I made the mistake, I might leave 2 jars to see how they work out.

I agree. It's not like you can smell or taste it to know. It's very unlikely but not worth any risk over cheap potatoes. I put them in the fridge to use later for mashed potatoes. Made a new batch and did it correctly this time lol.

And...WELCOME! Thank you! Yes. I did in fact pressure can them for that reason. I would assume they'd still have hit 140deg for the proper time....but not knowing for sure its not worth risking.
