I took the plastiic off my tomatoes and picked...too many! If some ripen, I'll probably make sauce. Anything else I can do with green tomatoes? I'm going to try green salsa and I know the chickens will get some.

I saw a recipe demonstrated by Patara of Appalachian Homestead on YouTube where she canned green tomatoes to make fried green tomatoes later. I don't know if it were a USDA approved recipe but all I saw on the USDA canning website dealt with tomatillos. Patara's recipe is a moot point if you don't like fried green tomatoes. My grandfather loved them but they were totally lost on me when I was a kid. I'm still not too thrilled with them. I'm afraid if I say that too loud, I'll have to give up my born and bred Southerner card I know I've seen a recipe for green tomato mincemeat but can't for the life of me, remember where. Good luck in using up your bounty.

There's a website *somewhere* that has all sorts of things you can do with green tomatoes. I saved it to one of my computers. Somewhere.
However, there seems to be a lot of different recipes online for things to do...like green tomato cake. Makes me wish I had some green tomatoes!
What I like to do is wrap them in newspaper and put in a box somewhere dark, then take some out when I want a nice fresh tomato, and set them on the window sill and wait for my nice, fresh tomato sandwich to arrive!

Now that I think about it, I have a booklet by Phyllis Hobson about 50 ways to use green tomatoes. The one I tried was pretty bad and I don't even the chickens being excited about it.

I tried some green tomato salsa, not good. Some have ripened, so I made reg salsa and it was very good. I think the chickens will be on a green tomato diet!

I have sliced green tomatoes and pickled them in regular garlic/dill pickling brine and used them on sandwiches. One year I had masses of green smaller sized cherry tomatoes. I made green tomato 'olives' using a lacto fermentation process. Not my favorite, but not too bad. Worked better cut up into things like potato salad, etc.

mzgarden, I think "olives" and "figs" were two of the recipes in that book I mentioned. It's from Garden Way if that's any help.
DH is less than fond of potato salad (can you say picky eater?), less so of olives. My guess this would be totally lost on him.

I can green tomato slices to make fried green tomatoes. One of our favorite winter meals is soup, corn bread, fried green tomatoes, and devilled eggs. Here is a recipe. I use vinegar instead of lemon juice myself. Green tomatoes are generally more acidic than red so they are safe to can. afarmgirlinthemaking.com/canning-sliced-green-tomatoes-for-frying/
