I have a unknown type of apple tree. I have been fighting little trees from the roots for years. Can i try and grow some of these trees as root stock to graft peach, pear or any other fruit tree on to?

There is one trick exception I know about that will let you graft pear or quince (requires an intermediate graft between the rootstock and the pear/quince), but for all practical purposes, you only graft apples to apple root stock.
Seriously root stock of all kinds is pretty darn cheap. Raintree Nursery is good place for smaller quantities. There are much cheaper places if you want to buy by the thousand. Just checked, seems the Raintree website deletes items that have sold out for the season so just looked and they only had few kinds rootstock still showing. Either get one of their paper catalogs which will show all their rootstock, or wait until fall/winter when they update website for the new season. They also have interesting section showing how you can multiply your own rootstock.
