I saw a recipe on Facebook today for popscicles that Disneyland makes and supposedly people line up for hours just to to get them. It was a simple recipe...whipping cream...whipped and a can of crushed pineapple pureed then mix together and freeze in popscicle molds.
Well I wanted to try them but I didn't have any whipping cream so I used a can of evaporated milk, I did add just a tsp of vanilla. I tried to whip it in the food processor, but to be honest it just got a little frothy, so we called it good enough, and I poured it out into a bowl (My food processor isn't huge) then dumped a can of peaches in, with the liquid they were canned in, and a couple of pretty good scoops of my seedless raspberry jam, when that was pureed smooth I poured it in with the milk.
Then I pureed a can of crushed pineapple, juice and all. Mixed everything together and poured it into some disposable cups I had handy (wouldn't you know I couldn't find my popscicle molds!) and stuck a metal spoon into each cup. Then I put them all in the freezer. Its only been about an hour and a half and they are pretty much slushes right now, but the kids are into them already and really seem to like them.
I told them that if there are any left they can have them for breakfast in the morning. Pretty easy and reasonably healthy, mostly milk and fruit. Just wanted to share in case anyone was looking for something different to make.
