Both recipes call for kosher salt. But, then have to grind to a fine powder. If I use table salt, would there be any dif in quantity of salt used?

By weight, I think you'd be close enough. I suspect by volume it might be a bit off. Definitely don't use iodized salt, it tastes funny.
Kosher salt powders beautifully in a blender, so I never tried anything else for "spice salts".
