My gooseberry bushes are loaded with berries this year. I've only ever made jelly with them & this year I'd like to try something new. Does anyone have any good recipes that they'd like to share? I'm thinking they're going to be ripe by the end of next week.

The prep is a little tedious, but I clip away the pointy tips and make pie. Gooseberries make a nice sauce to put over pork, pound cake or ice cream, too. Just cook soft w a little sugar to taste. A touch of cinnamon goes nice. For sauce, especially for meat, I don't mess with taking off the pointy tips. Don't even notice they tips are in there. If freezer space is not a premium, you can freeze gooseberries. Just rinse in a colander, shake dry and pour into bags or boxes.

Gooseberry fool.
Simmer them with sugar until mushy, rub thorugh a sieve then stir into whipped cream. I like this with a little elderflower syrup mixed in.
