I am getting more of the "seedless" skinny cucumbers than I can eat fresh .
We aren't much on home canned pickles and I still have lots from last year anyway so I need ideas on use of my excess.. maybe ideas for dehydrating or recipes of tried and true ways to use or preserve them..
anyone have any experience with making powder or chips with them ?

I always peel and seed some of my excess cucumbers and use them in stir fries.

What about making some cucumber water? My lovely daughter sliced lemons and cucumbers in rings, and put them in a huge stainless steel mug with a strainer top. Then she poured water in and we had electrolyte water!
