Bought a LOT of those through Zaycon recently. Put them all in the freezer. Now I'm thinking I would like some to be safely tucked away in jars. I have canned meat from old layers in the past so I know what to expect in regards to the end product. Do the boneless/skinless turn out mushy? Consulting my Ball book and thinking I ought to go the raw-pack route. If I use water instead of broth to ladle over the chicken-will that degrade the taste of the chicken at all? Also, any ideas as far as what you would end up using it for? Chicken pot pie? I've never bought canned chicken from the store so any ideas would be appreciated! I anxiously await your replies! When I can chicken breast, I raw pack it in jars add a little salt and no additional liquid. It will make its own broth. The meat is very tender, it can be broken apart easily with a fork, I don't know if you would consider that mushy or not.
I use it for chicken and gravy dishes, I also drain it and use it for chicken salad, and mix bbq sauce in and put on pizza crust with shredded cheese or use to make sandwiches.

mmm- bbq sauce on chicken and then stuff it in a home made bun. I'm going to be canning chicken raw packed later this month. I'll have to watch this thread to get some more ideas for using it after it's canned.

I raw pack and put about a 1/2" of water in first. I do that just to avoid air pockets. I think it's very tender and SO much better than store bought(it's dry, to me). The kids like to open a jar and just eat it. I have trouble keeping it canned up. We also use it for dumplings, noodles, tacos, enchiladas, burritos, quesadillas, lasagna, spaghetti, fried rice, creamed over biscuits, pizza, and bbq sandwiches. It's one of my favorite things to have on hand for quick meals.

I'll have to watch this thread to get some more ideas for using it after it's canned. Another tasty way to can chicken is to cube potatoes (peeled) and fill a quart jar about 1/2 full with them. Then stuff your chicken on top of the potatoes, I like to add salt, onion powder, and garlic powder. Makes a really good and easy chicken/potato salad.

Also watching this thread for more ideas of what to do with my canned chicken. I, like Mari-in-IN, have a lot of the Zaycon chicken in the freezer and need to transfer some to shelf-stable storage. I love to make chicken salad sandwich spread from my canned chicken breasts. The canned meat is fall apart tender, and is easy to break apart with a fork and mix with Miracle Whip, a bit of mustard and some sweet pickle relish. It's even better if you add some bacon bits into the mix.

yes, i am another raw pack chicken canner it makes a nice broth and i don't feel it is mushy at all. i used a jar just this weekend to make chicken and dumplins.

Once again I am forced to comment on what a great place this is with such awesome and helpful people! I have thoroughly enjoyed reading your replies, you've given me so many ideas! I'm really looking forward to canning some of this chicken now... And looking MORE forward to popping open that first jar and using it! (I have a sneaking suspicion the first one I open will not have been cooled off for very long after emerging from the canner... ) Will definitely be coming back to this thread... Thanks again! Mari

I know you can self publish, too. We have an author on this board...is it ketoriverfarm? I'd start by compiling all of those great recipes and organizing them by topic- chicken, beef, whatever. Just something to think about. Lots of people "out there" need those kinds of tips and recipes.

Some times when I can chicken or other meats I throw a bullion cube in lieu of salt in the jar, I especially like the onion or garlic bullion cubes

I wish I could get my family to eat chicken pot pie. No matter how I make it, what kind of crust I use- no one likes it except me. And the worst part? Every single one of them would rather eat a frozen banquet pot pie than a home made one. Smuggled in when I'm not home, of course.

Pour meat, gravy, veggie mixture into an 8 x 8 pan and mix: 1 cup Bisquick 1/2 cup milk 1 egg Pour over the top and bake 400* 30 minute. Can be doubled using a 9 x 13 cake pan.

I raw pack as well. I use chicken broth to fill the jars.
Don't forget homemade chicken vegetable soup, or chicken and noodle soup! A great use of your dehydrated veggies too - a fast delicious soup can be made using the canned chicken (I use the broth too since I use broth in the canning of the chicken), handfuls of dehydrated carrot, beans, mushrooms, peas, potatoes, corn, add'l water, spices. Let it cook for a good long time, oh so good! A frequent fall/winter meal here.
I find the chicken will stay in nice chunks if it's not disturbed much during cooking. Once you put a fork to it, it shreds beautifully.

I ordered my salmon fillets - I used to buy a whole salmon at a little less per pound, but I am so not talented at filleting on my own that I figure it's worth spending a little more to have them arrive already filleted and vacuum packed for me. I make my pot pie with a biscuit crust, too...much tastier than a traditional crust to my way of thinking. I add a bit of finely chopped rosemary to either the biscuit dough or the gravy, and I submerge the biscuit dough under the gravy for just a moment so it gets a nice coating on it. It cooks up to a really nice crispy edged topping with extra flavor.
