Anyone made soy milk or yogurt from it. Looks like it's easy to do.

Nope, too many negatives written about soy. I tried drinking it for a while and it gave me hot flashes - at 69 y/o. Haha. I even read food labels to avoid soy.

wolfmom That's interesting. I'm very allergic to dairy. Soy seems to work for me. I'll read label again.

Carrageenan is only ingredient on carton of soy milk, I didn't recognize. It's bad for you. I'd like to try making soy milk. It's just soy beans and water. Flavoring, too. Was going to use vanilla extract. Need to find out what shelf life is, if made this way. Saw how to make soy milk on Hillbilly Housewife site.

There are soybeans and then there are soybeans. Look for one of the old varieties that was bred first and foremost for human consumption, not the industrial beans grown today. The black soybeans probably easiest to find of the human friendly varieties. Not cheap, but you can find them. www.edenfoods.com/store/black-soybeans-dry-organic.html Look on Amazon if you want them in smaller quantities, though they will be higher price per pound.

How thick is hm soy milk? Seems like it would be thin. If so, is there anything natural that will thicken?

I am no soy expert, no doubt there are ways to ferment it like yogurt or keifer. But if you just want a stupid simple way to thicken it, look at something called glucomannan powder. Its a natural fiber (from Konjac root) and little goes long way. Thickens quicker in something hot. Needs to be mixed thoroughly and quickly, suggest a blender.
Was mentioned in my diabetes book. No carbs unlike things like corn starch and such. I experimented a little with it. I bought the NOW brand as it seemed most popular combination of quality and price from reviews on Amazon. There are many other brands/sellers, couldnt say whether they are good or bad, no personal experience with them.

I had to chuckle at the mention of soy milk. I tried it. It tasted like dirty socks!

Try Almond Milk. I like Almond Breeze unsweetened Vanilla. 30 calories/8 oz. Made by Blue Diamond. Contains 455 mg calcium.
Makes great chocolate milk for that quick chocolate fix.

What some call milk, just ain't. Old style Jersey milk? yup, squeezed it myself; same with Linebacks and some other wild crosses. Goat milk? Ditto, both dairy and Boer. Even spent a summer wringing out Holstein milk by hand (if you can call that watered down liquid "milk"). I wouldn't be averse to trying sheep, reindeer or even horse milk, or even trying my hand at milking such critters.
Never milked a soy, and never care to. Just seems wrong milking sumthin that don't breathe and walk.
