Numb has been experimenting with making cottage cheese. Along the way, he made a couple batches of "fail" -- LOL -- one being a very soft cheese that I thought would make a good filling for blintzes. I adapted this recipe that I found online: www.tasteofhome.com/recipes/cherry-cheese-blintzesI used our homemade cheese in place of the cottage and cream cheeses, and it turned out fine! (Oh, I also cheated and used a can of cherry pie filling for the topping.)

(Oh, I also cheated and used a can of cherry pie filling for the topping.) Those look good. Kinda like a crepe but maybe with a bit more body. And there is nothing wrong with a fail cheese. I bet every cheese we eat today started as a fail cheese of one type or another.

They were good but VERY rich ... put us both into a coma for awhile! I could feel my arteries clogging. lol
