Do you really need to can the inventory pages or can you just put the pages in a jar with a lid (or even a box!)?

Ken I had the same idea. Having looked at the link, I think a clip board on the inside of the pantry door might work.

I just use a spreadsheet to keep track of what I can. All my like items are put together, stored back in the canning jar boxes, unless they are on the open shelves in the kitchen.
Each winter, I take a look at what I've canned and it helps me decide what I need to plant in my garden the next spring (in case I had a bad year and wasn't able to put something up).
When the harvest starts, I take inventory of, let's say, how many dill pickles (whole, chips, spears), sweet pickles, bread & butter pickles, et al I have left so I can can accordingly.
This year, my tomatoes are slow to come in so I haven't done any tomato canning at all (and I haven't taken any inventory of any of my tomato juice, sauce, salsas, marinara, etc) but I know I've already put up 251 jars (and only 12 of those are jams).
Between the tomatoes, grapes & mushrooms, pork & chicken, I should be putting up another 350-400 jars easy before Christmas.

I use a google spread sheet. I made columns listing the type of canned food, how many I wanted to put up for the year, how many I actually had on hand and how many I needed to put up to get the desired number of jars. I use it at the beginning of the season when I take inventory so I'll have a good idea of where I need to focus.
I don't bother with updating it throughout the year because it's too much work. There's no way I could get everyone in the family to cross off jars as they use them. I pretty much do the same thing as Cyndi does.
Right now I'm wondering why I ever thought Bing cherry jam with cloves was a good idea...
