I have lots of syrup (heavy syrup) left over from my peaches so I thought you must be able to can it but I can't find any info on it.

Yes. Always do if not canning for a few while, fill the last canner with jars filled with it at least. I will keep it in the refrigerator for several weeks if canning yet....James

James, have you ever made peach pie using your own canned peaches? I had planned on canning Peach Pie filling but didn't.

Lots of them, just canned peaches though, don't like canned fruit pie filling. Open jar, drain, add ingredients, fill crust, add top and bake. My favorite pie, with vanilla ice cream....James

I always have syrup left over and I always seal the jar(s) of it so I can use it for the next fruit to ripen. I just put it in the water bath with the last of the filled jars and ta da...canned syrup. From what I understand, our grannys drained the syrup out of the jars and saved it to can with next year's fruit.

Well, now, that's a frugal idea, Callie. I even canned some Karo syrup that was taking up space in a gallon jug in my fridge. Pints, 10 minutes in a WB canner. I used the time from a syrup recipe that contained Karo syrup.

Like Callie, I've done the same thing with pears. This thread reminds me that there are a couple jars from 5 or 6 years ago in the pantry. Sort of a cross between juice and syrup. Main use was in making applesauce.

When I know I'll be canning fruit, I make a couple gallons of the syrup before I start. It doesn't take as much time to get a rhythm going if the syrup's all ready to go. Extra can be diluted to add to the bottles of grapes or whatever.
