I want an electric roaster ..
Now I don't NEED one but I know with my limitations that having one would be so helpful for me ...not only for preserving my harvest and adding to my pantry but also will be a help with other cooking ...
So I am saving my pennies and will hopefully have one by next years canning season ...
What is on your "Wish List" in the canning and preserving area???

I would really like a new food processor. I have 2 Cousinarts a big one, and a smaller one. Both containers are cracked. They are both really old and I have been using them for years and years. I can make them both work but new ones would be awesome! Maybe soon?
I have 5 pressure canners, but would really love to have an All American. I have so many functioning ones that I have picked up for cheap at estate sales it is really hard to justify getting a brand new one.....but a girl can dream!
Keep your eyes open I usually see electric turkey roasters go on sale anywhere from Thanksgiving until Christmas.

I want a BIG All American pressure canner. And a new food mill, and about 200-400 more wide mouth jars. Oh, and a bigger kitchen.

Someplace to can that won't let the whole place get unbearably hot. I've got about 45 qts of blanched green beans and two big containers of skinless tomatoes in the freezer waiting for the cooler weather that's right around the corner. Not a canning item, but I'd love to be able to get the materials together for a large solar dehydrator too. Right now, all my hillbilly drying contraptions(3), still don't move the herbs through fast enough.

A huge supply of Tattler lids is on my wish list. If I can't have those, I'd like a lifetime supply of older Kerr or Ball canning lids - the kind with enough gasket material on them to really seal a jar.
