That's right- I'm getting ready to brine 17lbs of green olives! I've been holding on to these pint and a half jars for several years and finally found something to put in them, ha ha. Well, I did can asparagus once (yuck!) and I have canned sauce in them. But- olives!? Oh boy.
Anyone else make olives? Wiki had 4 ways to preserve them. I went with the one where you make a brine, cover the olives for a week. Then drain, make a stronger brine, and cover for another 7 weeks or so. Can't wait to see how they turn out. I kind of want to try the mission olives later in the year. Our family loves snacking on olives. Would really like to make some with jalapenos...

raw olives come from olive trees, at least they are not to hard for me to find
I was going to brine some olives as well, but want to sprout the seeds so not sure I should brine them when I want new trees

Oh I get that they come from trees. I just didn't know that eating olives grew much in the states, except maybe in CA?

gracielagata yes, we got them from CA. Chaffin Orchards. They have lemons, too. But I was kind of wondering if I'd be able to successfully grow some olive trees over here...I have almond trees in my orchard.
