When you dehydrate your apples do you sprinkle with a bit of cinnamon/sugar first? Does that affect drying time?

You can, but....
I tried doing a light dredge once. Put the slices on the racks and let the Excalibur rip. The smell was heavenly! After about eight hours I decided to peek at the progress. I found a nightmare of sticky juicy ooze at the bottom of the dehydrator. The sugar had drawn out much of the juices from the apple slices and they dripped everywhere.
I eventually got them dried enough to put up, but swore never again. The cleanup was horrendous.

I've dehydrated with a light dusting of cinnamon, and it went well. I never added extra sugar, and can see now from horseyrider 's experience that I'm glad I don't!

Sugar and salt both draw out moisture, but that's not necessarily a good thing with sugar in a dehydrator! Besides, you won't need the sugar. Dehydrating concentrates the natural sugars so much, your apple slices will be plenty sweet without the addition of more. I've never added cinnamon, though it sounds nice.

Yup, I dust some trays with cinnamon. Never did sugar. I enjoy the taste and makes a nice snack.
