We all loved this bread:
Blueberry/Zucchini Bread
3 eggs 1 cup vegetable oil (can substitute melted butter) 2 teaspoons vanilla 2 cups sugar 2 cups shredded zucchini 3 cups flour (I used half white and half wheat) 1 teaspoons salt 1 teaspoon baking powder 1/4 teaspoon baking soda 1 tablespoon cinnamon 1 pint blueberries (fresh or frozen)
Beat together eggs, oil, vanilla, and sugar, add the salt, baking powder, soda and cinnamon. Blend in the shredded zuccuni, then add the flour mixing well. Gently stir in the blueberries.
Bake at 350 degrees ( I always bake at 325 instead) for about 50 minutes, or until set. This made three small loaves.

I made two loaves on Sunday and we finished the first one last night. Second one got put in the freezer right away for "later" when one of us is craving something good. I'll be the only one that remembers it's there, though.
At OUR house, it's known as Melissa's Awesome Blueberry-Zucchini Bread. If we have special company coming over, I like to bake up a fresh batch so the house smells extra good.

Melissa, I have made this bread several times it is so good!!! I have even tried it with strawberries and also with peaches instead of the blueberries. And it freezes well too! Thanks again for sharing such an awesome recipe

I absolutely love this recipe. I like to make it into muffins and mini muffins instead of a loaf.

I made this last year and it was really good! Hoping our blueberries produce well this year so I can make more. I've also made zucchinni brownies which were really good, I need to find that recipe.

Yesterday I made the recipe as written. Yummy! Next time I will add nuts. Other variations to try. Such as dried cranberries, raspberries or huckleberries.
