This week I used Jackie Clay's recipe for canning pork & beans. The sauce was a quart of tomato juice, 2 cups onions with some spices & some brown sugar. The sauce seemed awfully thick & didn't look like enough for the amount of beans. Recipe said 2 quarts of beans. I did 2 lb pound bagsof dried beans but now I wonder if it meant two soaked & boiled quarts. I did end up adding another quart of juice & some more spices as well as some dried onions to get enough for 9 pints. The beans look awfully thick but when I've canned plain dry beans they look pretty thick, too. Are they ok? The beans were soaked overnight, drained, boiled several minutes, drained again, & jars filled 3/4 full.

I have used the same recipe and they were really thick as well. In fact, they were too thick.....so I always add BBQ sauce and a bit of sugar and bake in the oven when I serve them. I have wondered if the beans soak up the juice or what. They are good, but just too thick without adding additional liquid when heating them up to serve.

Every batch that I ever made also came out thick. We prefer it that way rather than "runny" as some commercial types. Closest would be baked beans from the stores.
Simple sauce portion is any catsup recipe, even Mrs. Wages mix, as that's basically what it is.

I have made her recipe also and they come out thick. for me that is a good thing because i always doctor it up with more onion, bell pepper, ketchup and brown sugar and then bake them.

We dont make our own. We stock up when the store puts VanCamps on sale for .28 per can.
