Simple, bunch of stuff in the pot type of recipe. Edit: Oops! Forgot an ingredient!!!
3 strips of bacon
2 c chopped cabbage
6 large potatoes (about 2 lbs)
1 small/med onion chopped (recipe calls for 3/4 c)
1.5 sticks of butter
Fry the bacon til crispy. Drain and set aside.
peel and dice the potatoes for mashed potatoes - start them boiling.
melt the butter in a large sauce pan, saute the onion until lightly brown add the cabbage. Cook together until soft.
Cook Potatoes til fork tender, drain and mash (make mashed potatoes - no recipe needed!)
Combine the cabbage/onion/bacon and stir it together. Eat!
It very filling and tasty. Not strong flavor but better than plain ol' mashed. You could doctor it up with whatever you want too. ..Garlic, cheese.... whatever. But the basics are onion, bacon, cabbage and mashed potatoes mixed together.

I've got everything except the bacon on hand and I'm getting some of that for a quiche later this week. Sounds like a good recipe to try. Thanks for sharing.

I made colcannon for the first time on St. Patty's day this year. Since I don't normally like cooked cabbage, I was pleasantly surprised to find that I like colcannon. My 8 month old grandson loved it! I think he had 3 or 4 helpings.

I never knew it had an Irish name, but my variation is to use all those same ingredients, and when the vegetables are nearly done, I add butter and enough milk to barely cover, and then poach some eggs in the liquid.
I just always called it "cabbage and potato soup", and add lots of Paprika at the end
