What do you use fresh strawberries for? Besides, jam, dehydrating. Can only use so much jam and didn't like dehydrated ones.

Fresh, sliced with a dribble of honey, mashed, in yogurt, cottage cheese, pie. Freeze, smoothies, ice cream....James

I make pies, slice for fresh eating, freeze some for smoothies. I tried canning them once and that was just plain nasty!

I pop them in the freezer, and use them as I want. Not fond of the texture of dehydrated, and like you said, you can only eat so much jam. But frozen strawberries in the freezer are great. I can grab a few or a lot, for a quick snack or a fancy dessert.

strawberry fruit leather, frozen slices with sugar (use in any recipe that calls for frozen strawberries), canned strawberry syrup, canned strawberry sauce, canned strawberry-rhubarb pie filling

Knew someone would jog my memory. Have a recipe for strawberry leather. After dried, cover w/cream cheese. Roll up. Chill, cut into 1 in bites. Haven't tried it; hopefully this year. How do you store strawberry leather?

I do all of the above. I just started doing canned pie filling this past year, and it's pretty good, although not as good as using fresh berries. I store my fruit leather in canning jars sealed with my Foodsaver. I wouldn't recommend storing it outside the fridge after adding the cream cheese though!

My brother makes a strawberry loaf, just like a banana bread but w/ strawberries. It always disappears. I'll have get the recipe. I think it's from the Marlboro cookbook - thats the only thing he'll read.

Haven't tried it but saw a canning recipe for strawberry/lemon concentrate for strawberry lemonade. That sounded really good. i plan to try that this spring if the strawberries produce enough.

When we have excess fresh strawberries I sprinkle some sugar on them, let them make a little juice, then pack them in plastic containers and freeze. REALLY good the next winter when there are no fresh local berries available!

Does anyone have a good strawberry drink concentrate recipe they like? Honestly though I love them so much fresh & ripe and in jam - just like steak or fresh asparagus there's no such thing as "extra!"
