Been trying to drink ginger tea. Takes me forever to peel ginger. Any advice on that?

Hold the ginger with one hand, and scrape off the peel towards the ends with a spoon. Or Chop it with the peel on, put it in a food processor, process until in very small shreds, store in a jar in the fridge with white wine or alcohol (drinking kind) over it. That's what I do.

if you're just putting slices of ginger into hot water for your tea, just leave the peel on.
When I'm pealing ginger I slice the inch or so I want off the rest, then turn it sideways so it looks like a fat coin and then just chop the edges off.
