At first it was hard to get my head around the idea of mashed cauliflower instead of potatoes. At first I mashed cauliflower and was a bit disappointed and wondered what all the hub bub was about. Then I made them this way.
I cooked a medium to large head of cauliflower (on sale these days) in a large pot with water until completely softened, drained it and let it cool.
In the food processor I added:
1/4 teaspoon chicken soup base dissolved in 1/4 cup warm water
1/4 teaspoon garlic powder
1/4 cup parmesan cheese
2 tablespoons cream cheese
black or white pepper ground
Then I put the cooled cauliflower in the processor and whipped it up, quite a good long time.
I was surprised how very good it was. I put a little butter on top and really it was excellent. It was reminiscent of the mashed potatoes with a pat of button on top.
Then I asked my two carb-eater family members to please just give it a try and be honest about whether it is good or not. BOTH of them really liked it. The very next day one of them stopped at the market and bought two more head of cauliflower for me to make more! That told me they were pretty serious about liking it.
Usually for part of their dinners (Second shift), I freeze them a 2- 2 and 1/4 cup measure of food, 1/3 meat/poultry, 1/3 rice/potatoes/pasta, and 1/3 vegetables. I substituted the 'mashed cauliflower' for the 1/3 rice/potatoes/pasta and both of them agreed it was a good addition to the regular choices.
If you've tried to go to a diet with less carbs, this seems to be a good staple to have on hand. I had a bowl of it this morning and it tasted as good now as it did when I first started making them this way.
