A salad dressing for a lettuce salad, an iceberg slice, or a pasta salad.
Caesar Dressing
In a Blender: 2 cloves of garlic 2 (or more) anchovies (or anchovy paste) 4 egg yolks 2 T dijon mustard 4 T lemon juice 1/4 t. ground pepper Blend. Then on low, slowly add up to 1 and 1/2 cups of olive oil, and it will emulsify slightly, not as thick as mayonnaise.
Mix in 1 cup parmesan cheese. Taste for salt level, adjust if necessary. Store in the refrigerator for up to a week.
