I think I am finished for the year. I made a new recipe of cranberry preserves. We tasted it and good! I made christmas jam (cranberries & strawberries). I made mustard since everything was out. All these will be christmas gifts.

Picked up a side of beef, yesterday. So now the winter canning season begins. Yesterday, I thawed enough to get a batch of beef broth (9 pints) done and the first canner load of beef chunk (17 pints). Have 7 roasts thawed or thawing for another load of chunks. Then sloppy joe, meatballs, soups, and finally dog food. Going to be a busy few days.... Then I need to start canning beans...

Last week, 12 pints of Stroganoff meat. Two deer necks scored all around at 1". Simmered with garlic and onions until meat fell off the bones. Today was 15 pints of spaghetti sauce which started as about 5 gallons of frozen puree. That ends canning for this year.

Because it started at minus 19 today, I decided to dig in freezer for peppers & tomatoes. Canned 12 jars of salsa that might last us until we have tomatoes again.

I'm starting late this year, usually am back to canning by February. I did can up 20 pints of black beans yesterday, and 18 pints of veggy soup last month.

Not exactly can, but we got a small crock of crock pickles made. They'll be ready in a week to ten days. Then into the refrigerator they go.
Tomorrow we'll actually can a bunch of pickles.

Fourteen pint jars of peaches. No peaches at any of our local orchards, so I ordered from The Peach Truck and picked them up last week. Kind of expensive, but I always think I just have to have home canned peaches. Probably will can 10 more jars tomorrow. Peaches make me happy!

One of DH's coworkers invited us out to pick corn. I have 40 pints of corn, 8 pints of corn salsa and 2 9-tray dehydrators full. I'm about halfway done....

My canning is kind of 'forced', not wanted but one of the freezers is starting to die even with putting in a new gasket. I'm working on things from the bottom shelves up, canning all the deer and elk and making chili with some of it and canning that. We've all been sick so I have zero energy, but have to save the meat.
I was hoping hubby's co-worker would offer peaches but she hasn't, so I guess she doesn't have any this year. That was about all Mama could eat her last few months, so I was glad to have them then.

Sliced pears for the dehydrator...they will be gone before they are dry...too good! Made bread & butter pickles today. I think green beans are tomorrow.

Getting my poop in a group, trying to get started canning pears today. This will about end up the canning, except for beets. Glad to see a good supply for the winter. Need to make apple sauce, but freeze that so not a big deal.

So far, 18 jars of tomato soup. They are 2# Queenline honey jars which hold 1½ pints and take a #63 lid. All old Bernardin lids have sealed but one Ball did not. Considering that they are 40 years old or more, not bad.
Tomato soup recipe is simple. Tomatoes, garlic, onions, and basil. All sent through a blender to liquefy and simmered for half hour. Then pressed through a chinois sieve.
Next will be my version of V-8. Tomatoes, peppers, parsley, basil, garlic, onions, celery, and beets. That will be canned in 2-quart jars.

Apple season here. This week I canned 19 qt of apple pie filling, 24 pt of pie filling, 18 pt of green beans and I am currently cooking down the rest of the apples for applesauce that I'll can in pints. We have plenty of qt from last year....and our nest is emptying fast, so canning in pints this year.

Last night and this morning, 8 more 2-quart jars of V-8 juice. (Note to self, less basil next time.) This ends canning for awhile despite 7 or 8 gallons of prepped tomatoes in a freezer. Maybe a big sauce batch in the winter.

Happily canning pears as they ripen;a few pints at a time. Very sad about having only enough tomatoes for fresh eating. I've canned more plums than we'll use in years(laughing)and so began a gallon jar of plum vinegar which is my favorite.I expect I'll end up starting several gallons since our late tree is loaded! and the end result should be at least 4+quart jars of the "good stuff". Our apples are not ready yet and I'm looking forward to restocking the quarts of apple and apple-pear pie mix we've almost used up.

Canned potatoes today...now I can put away the pressure cooker. Also made apple jelly, cranberry/apple juice and put away a big batch of dried potatoes. I never put away the water bath canners...use them all the time. Still staring at too many apples...maybe some will go in the dehydrator tomorrow.

Over 2 days canned 10 qts and 2 pints yukon gold potatoes and 2 more carmelized onions. Have one more big tray of red onions to caramelize and then I think I’m done with pressure canning. Would love to find some apples at a reasonable price but they are sky high by us.
