I bought some rice stick noodles on my shopping trip this past Saturday . I need some ideas / recipes to use them in .. They are not the dried ones but the package says they can be held in the fridge for up to 2 weeks (and I am thinking maybe longer ) .. I am going to take some out of the package and freeze them as a test because I did see they can be frozen for up to 6 months . I don't eat really HOT /spicy foods but do eat some heat and or spice . I have some pea pods and baby boc choy as well as daikon and chili paste .. I also have the usual garlic...onions...dehydrated mushrooms and celery ..veggie and chicken stock ...beef broth and can add either chicken ..pork or beef or eggs... Could someone give me some ideas ?

Hey there! I buy the dry rice noodles, just love them. I like to use broth, then add one meat (already cooked), and 2-3 veggies (often our dehydrated, or fresh), and then whatever you like in the onion/garlic category, salt pepper and an ever so small dash of cayenne pepper. I add the cooked noodles into that mixture - very good!

Thank You .. I haven't been to any restaurants where they are used but hope to someday soon .. I will try what you suggested this week for sure since I have everything needed ..

Fresh rice noodles are for Char Kuay (or Kway) Teow. A fantastic specialty of Malaysia. Google it!

I've used them in beef sukiyaki with various veg besides the classic, especially bok choy. They can get moldy pretty quick, "up to" 2 weeks says it, even in the unopened package. Like them best with chickenie things, noodle soup with whatever for nice evening meals that sit well on the tummy.

I used them in a chicken soup and find I like them much better than the dried noodles I have used in the past ..
I think I will get more and may even try some other varieties I saw ..

Thai Noodle Salad Juice of 2 limes Zest of 2 limes 3 T chili garlic sauce 3/4 cup sweet chili sauce (take it easy for this and the above chili garlic sauce - you can always add more) 1 T fish sauce 1/4 cup rice vinegar 1 T sesame oil 1 T toasted sesame seeds 4 cloves fresh garlic, minced Carrot, julienned Red bell pepper, julienned Green bell pepper, julienned Green onions, sliced Cilantro, chopped Rice noodle, or noodle of choice, prepared and cooled Shrimp or chicken, cooked and cooled (optional)
