Woke up this morning and checked the dehydrator that was running all night, couple more hours and 45 pounds of yellow onions have filled 5 half gallon jars. Our aldi store had them on sale for 3 pounds for 69 cents. Several batches later I'm almost done..

Dehyrated onions are so useful. The only time they are not is if one needs the crunch of fresh onions like on a hamburger. They can be ground as seasoning or put whole in cooked dishes.
I try to dehydrate on the porch using an outside outlet because of the smell. Almost everything else has to be done inside due to wildlife interference. But onions have their own built in repellent. Nothing bothers them.

These were done in the garage, about 30 feet from the house..we learned that a couple years ago..lol

Two years ago I dehydrated 100lbs of Vidalia Onions. It almost caused the DW to divorce me.

OK so I bought some onions to dehydrate. After they are dehydrated how do I store them. And do I grind them up or do I store them whole and just toss them in things to rehydrate? Thanks

Yeah. What Redfish said. They are one of the few things I don't vacuum seal. Just in a canning jar with a lid.

I save all those silica packets from our medication. I put my onions in a variety of jars. Some I just crunch up and put in pint jars, some I put in quarts ect. I only use wide mouth for the onions, go in easier and comes out easier. Also instead of opening a big jar and letting moisture in, Just the smaller jars and then continue on to another jar. I put one of the silica packs in the top of each jar. Also I just shred my onions in the food processor before drying.

What do you use dried onions for? Everything I cook with cut up onions in it starts with frying the onions to either a light or a golden brown for taste, including soups and stews. can you do that with dried if they are re hydrated first? We're only fresh onion free for a month or so here but it would be nice to have some I could use without taking up freezer space.

I use dried onions for seasoning mixes such as taco or ranch dressing. I also make onion soup mix with them as well.
Cooking wise I mostly use them in meatloaf, rice, or chicken rice casserole.

Skandi, we use them just as you would use fresh, if you need the fresh crispness in you cooking
