Egg Custard Pie
(Makes own crust)
4 eggs
1/2 cup margarine (or butter) softened
1/2 cup all-purpose flour
2 cups milk
1 cup granulated sugar
1 cup coconut flakes
2 teaspoons vanilla
Blend all ingredients in a blender for a few seconds, until well mixed.
Pour mixture into a 10” greased pie plate.
Bake at 350 degrees Fahrenheit for 1 hour or until center tests firm.
Then flour will settle to form crust, the coconut forms the topping, the center is an egg custard filling. — with Joyce Crockett Card and Barbara Pitcock.

That's one of my mom's very favorites. She calls it impossible pie. We ate it a lot growing up butI still make it when I need a quick dessert. I like to throw in a couple of handfuls of chocolate chips. Yum!
