I was gifted cabbages and broccoli today. I have lots of fresh produce I need to use up. Can you please tell me what to do to be able to freeze these for later use. Would like to cut the cabbages into steaks to grill.

"Cut the head into wedges or coarsely shred. Blanch wedges 3 minutes, shredded cabbage 1½ minutes. Cool. Pack cabbage into can-or-freeze jars or plastic freezer boxes." That's from the Ball Blue Book.

I always put cabbage in the freezer. I cut the cabbage up like I would if I were going to cook it for dinner. I bring a big pot of salted water to boiling. In another large bowl I put a colander. I blanch down the cabbage till it's about half done, then put it in the colander. Another batch in the water while I put the drained cabbage into quart freezer bags. I just let the quart bags thaw and cook however I want. The U-Pick field a few miles down the road will be open for cabbage soon.

dodgesmammaw, I always blanch broccoli in lightly salted water for 3 minutes or so, drain well and it freezes beautifully.
