Homemade Elderberry Syrup
1 cup dried elderberries
½ cup blueberries (fresh or frozen)
3 cups water
¾ cup RAW honey
Bring elderberries, blueberries, and water to a boil in a medium sized saucepan.
Reduce to a simmer and simmer for 45 minutes.
Using a fine mesh strainer, strain liquid out into a bowl.
Using the back of a spoon, press lightly on berries to get all the liquid out.
Make a mess to make Stacy feel better about herself.
Cool mixture slightly and then add honey. Stir to dissolve.
Pour into storage bottle and cool completely before refrigerating.
Mixture will keep for 3 months in fridge.
Take 1 tablespoon daily to boost immunity for adults – 1 teaspoon for children
If sick, take that same amount hourly.
Yield: about 2 cups

I've made elderberry syrup the last few years. I have a nice sized bush growing up through my fig tree. There are also others nearby. It is a blessing to me, as I am highly susceptible to upper respiratory illnesses. I find that this year it has especially helped, though I'm not sure why that is.

Well, I don't know about making the syrup but I can tell Stacy's my kind of cook. Don't worry, Stacy, my mess will always be bigger than yours. That's why I have the giant size bottle of bleach.
