I will be butchering a steer this Fall, and I want to can beef stew. OK, I want my wife to can beef stew.
I need to plant the veggies for this stew, now. I need variety suggestions. especially potatoes, which commonly available variety is best for canning?
I will also grow some onions, peas, and carrots. Maybe green bean chunks?
What else is good in beef stew?

Pearl onions, Baby Red Potatoes and Baby carrots, for sure. Now, I have a hankering for beef stew.

any veggies you like, will be good in beef stew. me personally i only use carrots, potatoes, and onions for stew, but for beef and veggie stew, i add in any veggie i want, from cabbage to corn, to green beans to peas to hominy. the sky's the limit.
One thing i do, because my family is large and it is not just my husband, i can my "stew" ingredients seperately and just add it all in and simmer with a bay leaf. I can get more food storage out of my jars and feed more people this way. i just pop open a jar of stew meat, a jar of potatoes, and a jar of carrots, add some more water if needed, some bullion if needed and let it simmer. this will feed my entire family with leftovers but if i just canned my beef stew in a quart jar, it would only be enough for two or three people. I have done this though along with chili to send with my hubby to deer camp for an instant meal he doesn't have to "cook" after a long day's hunt.

You might find it better to can the meat and vegetables separate. Then there is more possibilities for variety. Cabbage may not be a good idea but definitely carrots, onions, potatoes, and maybe peas. Also, not in water but tomato juice. For potatoes, use only a low-starch variety such as Kennebec, Red Norland, or Yukon Gold. They retain their shape when canned and don't turn the liquid white.
