I just finished putting 8 pints of canned ham in the pantry. .cant pass on the special prices this time of the year.probably will can one or 2 more

I love canning. Last week was 32 qts of pintos, 21 qts of split pea soup, and 21 qts of beef stew. Currently working my way through a Zaycon chicken order and then starting in on venison a neighbor gave us. Hoping to thaw it this weekend and get it canned up early next week. Haven't decided quite yet what all I'm going to do with it, other than it's going in jars.

I've never canned anything ham that I can recall. Mostly beef or venison for us. I bet that is really good. What will you do with it to serve it? It's always great to find a great price around the holidays or just afterwards.

Actually feather we have only done one ham prior to the one we just did. The first one was just cut into chunks about half inch chunks.this one was spiral cut so the pieces are thinner but prep time was minamal. We use the meat for about everything, with eggs for cassarol, with potatoes, with beans..anything requiring chopped ham. The meat turns out a little darker, but no loss of flavor..we found freezer ham turned not so nice, but canned works for us

As a rule of thumb, a pint holds about 1 pound of meat, so you can find out what size jar is best for you

Last week, I canned 12 quarts of chicken and 12 quarts of beans. I dehydrated 2 "loads" of egg noodles. Later this week, Hubs wants me to can some meatballs.

Farmchik. We make our own noodles, it has raw egg in it, can you still dry and safely store them Yes. Bacteria has to have moisture. By dehydrating, you eliminate the ability for bacteria to grow. I make mine from scratch and dehydrate.

farmchix, how do you make your egg noodles? And do you use a pasta machine to roll them out or a rolling pin? I have used the simple recipe of a pile of flour with a well in the center, adding a scrambled egg and mixing it until it makes a smooth dough, then rolling out. I have a pasta machine now and a glut of eggs, so I think I may be in noodle making mode soon. Any hints for better noodles would be appreciated. I canned 9 pints of chicken veg soup, trying out my Tattler and 4EverCaps a few weeks ago. Had one failure of a 4EverCap, but the rest sealed well. I figured that wasn't too bad for a first attempt - I'd been told there could be a bit of a learning curve with the reusable lids.

Same pile of flour with the well....then keep adding 1 yolk + 1 whole egg (scrambled together) until it becomes a dry enough dough to roll out. I use a rolling pin. I use a pizza cutter (the rolling kind) to cut them into the strips. Some people dry on towel racks. I dry them in the dehydrator. Store in sealed zip bags. The key is in the egg proportions. For every egg yolk, you add another whole egg. I find that when I roll them thinner than the 1/4", the noodles aren't as "eggy" on the palate.

Our basic receipe is 1 beaten egg, tsp of salt , 2 tbs milk, 1 cup of sifted flour. .roll flat cut into noodles, with the pizza cutter.. dry for couple hours and good to go

wally,we've never canned ham other than in pork 'n beans. I was going to ask what you use it for but you already answered it. My son shops at a store that often has big meat specials in bulk. I'll have him watch for some cheap hams or shoulder roasts. Martin
