Think of this as a spice cake, or possibly carrot cake.
Ingredients 1 cup gluten free flour mix OR my version: (1/3 cup sweet sorghum flour, 1/3 cup oat flour, 1/3 cup tapioca starch) 1/2 cup granulated sugar 1 tsp baking powder 1 tsp ground cinnamon 3/4 tsp allspice 1/2 tsp ginger (powder) 1/4 cup melted butter or oil, cooled 2 eggs 1/4 cup milk 2 medium parsnips, peeled and finely grated 1/3 cup walnuts, if desired
Icing 1/4 cup melted and slightly browned butter (don't burn it!) 1 cup confectioners sugar 1 tsp vanilla 2-3 tbsp milk
Preheat oven to 350F Butter an 8x8 baking dish. Put flour, sugar, baking powder and spices in a bowl and mix. In another bowl (or same bowl if you are like me), add melted butter, eggs and milk and mix all together. You can't really over-mix gluten free flour. Add parsnips (and walnuts). Put mixture in pan and bake for 30 minutes or until cake tester comes out clean. Combine Icing ingredients in a bowl and beat until creamy, adding the milk as necessary to get frosting consistency. Let cake cool and put on icing.
