We started making curries again for DS and I, for something spicy and healthy.
Cube a cup or two of zucchini A cup or two of little broccoli trees chop a 1/2 cup of onion chop up 2-3 cloves of garlic set those aside.
Vegetables (about 5-6 cups) zucchini broccoli chick peas (a can/pint) (or use what vegetables you have on hand-tomatoes in chunks, carrots, legumes, cauliflower, potatoes in chunks, eggplant)
Sauce 2 T oil or butter 1/2 cup onion 2-3 chopped garlic cloves 1 heaping T chopped ginger 1 heaping t curry paste (green) 1 T oregano crushed 1 T curry powder 1 t turmeric 1 t cumin 1 T crushed or ground coriander seeds Saute the sauce ingredients in a frying pan or heavy bottomed kettle until the onion is translucent. Add: 1 pint of tomatoes (or use fresh) Cook that down until it starts to get thick. Add: 1 t. lemon juice (optional) 1 t. sugar 1 t. salt or more to taste
Add the chick peas and broccoli and cook until the broccoli is half done. Add the zucchini and cook until it begins to get done, don't over cook it.
Add: 1/3 cup sour cream (or cream or kefir) Stir until uniformly hot and serve. Makes enough for 4 servings.

We ran out of curry in short order, mostly because of me. I like having one of my meals all vegetable or close to that. It was so good.
So today I'm making a double batch but this time it is going to be made a sweet potato coconut milk base. Instead of tomatoes, sweet potatoes and broth, instead of sour cream, 2 cups of coconut milk. Double on everything including broccoli, chick peas with kidney beans, and zucchini. Double the onions, garlic, ginger and all the spices. Omit the sugar because the sweet potato has sweetness. Thicken the sauce by cooking it down, barely cook the broccoli and zucchini.
That will be enough for 8 servings, enough to freeze some of them and refrigerate the rest.

3 zucchinis, slice off the core and throw the core away, then cube the zucchini. Add 1 large chopped onion.
In a saucepan, a few tablespoons of oil, add the zucchini and onion, start to saute.
Then add: 1 T red curry paste 1 T finely chopped ginger 1 and 1/2 T chopped garlic in butter 1 t dried oregano 1 t curry powder 1 t ground cumin A few shakes of dried garlic powder A few shakes of dried onion powder 1/2 t garam masala (heavy on black pepper)
Keep stirring cooking the spices, softening the veggies until it is almost done to your liking. The veggies give off enough water to keep it from burning.
Then add 1/3 cup sour cream 1 T lemon juice Salt to taste
It's so good an takes a half hour to saute.
