Brother put me onto leeks---never saw one growing when I was a kid.
Planted them the last two years. The crop last fall was excellent and we could not use them all. Some wintered over, looking mighty poor in January. By now they've recovered, are almost two inches thick and two feet high. One or two have begun the seeding process. I've almost twenty left.
We've made leek and potato soup, and we've added them to various stews---they are good along with celery in both chicken and beef soup base.
Do any of you have other uses for leeks? I have a whole row of "starts" in the cold frame and just wonder how many of them I should set out.

In noodle dishes, mashed potatoes, fritatas, stews/soups, or cooked separate. I imagine you can clean and chop them and freeze them just like onions if you end up with too many.

You can use them in place of spring onions as well. if you slice them finely lengthwise it's hard to tell the difference.

I make a soup of mixed onions and some garlic cloves in chicken broth, sometimes with some chopped greens. I love leek & potato soup, and also leek, potato & chicken soup, too. The first soup is lighter, so it goes with a meal, rather than being a meal in itself. Uses 'em up faster. You can slice leeks vertically and roast in the oven or put on the grill for a side dish.

You don't have to wait for them to mature in order to use them. Pull them at early stage and use like green onions. If you overwinter them, use them quick as they will become woody as soon as the flower stalks form.

Thanks all for the info; I like leeks and enjoy growing them---they make a poor gardener look successful. Feather, I would not have believe you could devise 27 ways to eat leeks!

I underestimated the viability of my leek seed (apparently it lasts a little longer than onion seed) and have 2 square feet of leeks thick as grass turf where I tossed a mix of old onion and leek seed. Spreading them out in trenches until they start infringing on the space for anything else or my back whinges. The onions planted earlier already cover 1/6 the garden so these will get less space. Bet next year I won't even want to plant either. And might have a freezer 1/4 full of them.
We love leek potato soup- I use the entire leek and call it green mashed potatoes. Too bad I've given up on growing potatoes here- those will come from the store.

I felt the same way when I saw his post here, bowdonkey. As we get closer to planting season country wide, I think many more people will be thinking about him and missing his input.

I thought of him often during the November deer hunting season. He always had people …. Nephews and cousins …. That would bring him freshly harvested deer. Then, he would cut them up and get them into the freezer.
Also, thought about him a few weeks ago when I was setting the aquarium up again. He had both an indoor aquarium and a pond in his garden with fish.
The man had a story to tell about just about any subject …. Both in and out of the garden.
Loved hearing him tell about his family’s association with the family of famous architect Frank Lloyd Wright.

Yes, this is agate country. At Moose Lake State Park they have a agate interpretation room. Lots of interesting history and agates on display. And yes I'm up north, big time hockey, ice fishing and sauna area. And yep I do jump in the water of a frozen lake after a sauna. And if no lake is handy, a roll in the snow. It's a rush, an awesome feeling once you get used to it.
