If sliced thin with a small "rind" of skin on the edge, good with the skin on, more fiber. But some apples have a thick skin and bitter, not so good....James

I prefer drying slices with the skins off. If you have access to a few varieties, it is worth looking up what is recommended, and trying some samples. Some of the well-known eating apples don't make tasty Schnitz. I like 20-ounce, which was developed to be large pie-filling slices that would stand up to commercial canning temperatures. Mild, sweet apples like Macs aren't a lot tastier than a spoon of sawdust when dried, if you ask me.

We do it both ways, one kid doesn't like the skins but loves the dried apples with yougurt as a snack.

Use Less, I agree, I've inherited what is meant to be a cooking apple here, and yes it turns to mush when cooked, but it is sweet no sour at all! Makes a totally tasteless sauce. However it does dry up wonderfully. I peel mine because my apples are always blemished.

We usually buy two bushels each year. One for "Apple Pie in a Jar" pie filling, the other for slicing and drying. We've used Galas the past few years, they do well for both uses. Before we put the "peeled" apple slices in the dehydrator we sprinkle a little cinnamon on them.

I think that it depends upon the variety. There's a big orchard not far from here and I start visiting as soon as the first varieties are ripe. With permission to take a sample of every variety available, I might come home with 15 different. There are some whose skin is just too much for my remaining teeth and others as if it isn't there. There are some forum friends who often send dried apples and always without skins. I may dry some this fall when the 2018 crop comes available.
