Assembly instructions for Burritos--Chicken/Cheese/beans/rice
2-packages of 10 inch flour tortillas (20)
Beans 3 pints of pinto or kidney or black beans drained and rinsed Cook 1/2 cup chopped onion in a little oil then add the beans Add 1 pint of tomatoes or fresh tomatoes 1 T. chili powder 1 t. ground cumin 1/2 t. garlic powder
S&P to taste Cook out the liquid until it is almost like a paste with whole beans in it
2 cups of cooked brown or white rice
1 and 1/2 to 2 Cups of chopped cooked chicken 1 and 1/2 to 2 Cups of diced or shredded cheese (whatever kind you have)
Lay out the tortilla (steam for a minute if they don't fold easily) and put a small amount of chicken and a small amount of cheese in the middle. Then 1-2 T. rice, then 1/4-1/3 cups of the bean mixture.
The video is 16 seconds on how to fold a burrito.
Then I freeze them in a single layer on a half sheet pan. Once frozen put them in large zip lock bags.
To eat, either microwave, bake, or cook in an oiled sauce pan and serve with sour cream, salsa, lettuce, guacamole, whatever you have on hand.

Looks tasty, but would be so easy to eat more than a couple. 10" flour tortillas are 220 calories each (just the tortilla)!

Looks tasty, but would be so easy to eat more than a couple. 10" flour tortillas are 220 calories each (just the tortilla)! Well, yup. I'm cooking for DH and DS. I made these spicy for DS. He could eat 3 at a time I'm sure. DH wanted to try one, he did, and I couldn't believe it, he liked it, even with the spices.
I probably should have mentioned that I assembled them when everything was at room temperature. It's probably easier than burning my hands, or melting the cheese with the hot bean mixture.
If you don't eat the tortilla, it's just a bowl of beans w/rice and a few additions.

Breakfast burritos for the freezer
First I made 4 breakfast burritos for myself, with asparagus, mushrooms, eggs, cheese. Then I made 16 regular ones with asparagus, mushrooms (until I ran out), pork breakfast sausage, eggs, cheese.
For 20 burritos
20 of the 10 inch flour tortillas (microwave or steam to soften them)
24 eggs, scrambled with s&p
2 lbs of sausage made of ground pork, salt, fennel, sage, thyme, paprika, onions powder, garlic powder, sugar, stirred and browned in a frying pan.
1 lb of asparagus cooked 2-4 minutes in boiling salted water, depending on how thick they are, take them out as they get tender.
1 lb of mushrooms in cheese cooked, frozen, thawed, drained.
2 cups of chopped fine cheddar cheese
Assemble them and then freeze, once frozen, bag them and label them. To serve, microwave or bake or saute in a frying pan to brown the outside.
