I was nosing around my granma's old smokehouse and ran across a stash of gallon jars. Now, these look like the old pickle jars to me, or something like them. I'm pretty sure she used them for lard or for milk.
Are there any other good uses?

I store my left-over garden seeds in a couple jars like that. I stash them, tightly closed, in a closed cupboard in a cool room. The seed viability stays very good. I've kept dried fruit, bulk spices and so on in them, too.

I have about a dozen of them. They were either pickle or mayo jars. I use them for dry beans and seed storage. They could be used for anything that needs to be stored dry.

I've got a bunch that we can grape juice in every year. A gallon takes up a lot less room in the fridge than 4 quarts would. Wade

I have a few gallon jars with wide mouths. DH uses them for pickled eggs (not canned, just aged 3 days before eating--typically for deer season).

I've put my honey in them, made kombucha, milk, and brined feta cheese.

I don't even know how many I have. A dozen? Twenty? They hold home dried fruit, herbs, beans, like everyone else. But in the late summer, one of them will hold brandied peaches; and later in the fall, Tutti-Fruitti. All one has to do is add equal parts of sugar and brandy to layers of chunks of seasonal fruit, sometimes with some cinnamon sticks and cloves, and keep it in a cool dark place. That goes over ice cream or custard, or even cottage cheese in the dead of winter. That's livin' large. I think I'll freeze some Bings to throw in the mix in November.
