I am looking for recipes using zucchini that are not the standard recipes. After 30 years of growing it and cooking/baking, I have a good collection of tried & true recipes for zucchini bread, baked zukes, zuke boats, etc. I'm looking for some recipes that are maybe a more unusual take on it - unusual spices? different pairings? etc.
Anybody got a maybe less standard approach to preparing zucchini they could share?

I do pancakes with it. Grate a small one finely, (don't squeeze the liquid out) mix it with an egg enough flour and Baking powder to make a pancake batter, then add any sugar/seasonings you like. This morning I did it with lime zest/juice I also do almond essence or just vanilla.
We also like it raw in salads, especially with spicy Asian dressings. I find that it can be added to chili or any other mince dish, peal and then either coarsely grate or just cube, it'll vanish into the sauce and no one will be any the wiser. I also add either peeled green or whole yellow ones finely grated into dry mince dishes. like pork mince in lettuce cups. again it vanishes and just adds bulk and more vegetables.
