We rarely have batter fried anything. Today, some zucchini strips with parmesan ranch dressing. And some walleye with tartar sauce. Treat for my DH and DS.
The batter works every time.
Batter 1 C all purpose flour 1/2 C corn starch 1 t. baking powder 1/4 t. baking soda 1/2 t. paprika 3/4 to 1 C sparkling water (or beer or something that sparkles)
It's really the best batter I've ever used and I keep making it and use it about 2 times each year.

feather, do you dip into flour first, before the batter? We don't eat much fried food either but that looks promising.
