Maybe someone can help me with this. I think I've estimated it right but I don't want to find out I messed up after I make the cheese.
First, pasteurization really denatures the proteins in milk and homogenization squeezes the large fat globules into tiny ones and both of these things change the cheese in negative ways. That's why raw milk, or low temperature long hold pasteurization is better and non-homogenized milk is better for cheese making.
Here's what I want. I want a few cups to a pint less than 4 gallons of cow's milk and I want it to have 3.5% fat. (store bought is 3.25% and some cow's give 3.6% and I want something in the middle.)
I want it to be a combination of skim milk (which has no fat therefore no homogenization) and heavy whipping cream at 36% fat (which is not homogenized because cream is generally not homogenized).
How much skim milk plus heavy whipping cream will combine to make a milk that is 3.5% fat and about 3.75 or so gallons.
I'm estimating the fat in the heavy whipping cream at a little over 1/3. A quart and a pint of heavy whipping cream will have approximately 17 oz of fat and 48 oz of volume. 3.5 gallons of skim milk with no fat. Add them together and I have 3.5 gallons plus 32 oz plus 16 oz, so just 2 cups short of 4 gallons. Then I have 3.42% fat--that's about right? (17/496 oz)
I'm if I'm off somewhere, anyone want to help me out with some math checking?

Pardon the geeky number of decimal places. 3.75 gallons = 499.6023 oz 3.5% of 499.6023 oz = 17.4860805 oz fat 17.4860805 oz fat / 36% WC fat content = 48.57244583333333 oz Whipping Cream (1.458328721636729 quarts, or 5.750390669612847 cups)
499.6023 oz - 48.57244583333333 oz Whipping Cream = 451.02985416666667 oz Skim Milk (13.541623843769626 quarts, or 3.3854166929315044 gallons)
Looks like you're in the ballpark to me!

Na! Just means feather is aiming to use 1 quart plus 1-3/4 cups heavy whipping cream and 3 gallons plus 6 cups skim milk. Close enough for cheese
