My chicken salad used to taste too much like tuna salad so I came up with a recipe similar to what Arby's is now offering in a sandwich.
Amounts are by the seat of my pants
Diced chicken Diced celery chopped crasins or red grapes chopped pecans or almonds homemade mayo to moisten
I put finely shredded zucchini in it yesterday and it was more moist but the flavor wasn't affected.
Mayonnaise
1 egg 2 T. red wine vinegar, divided 3/4 t. salt 1/2 t. dry mustard 1/4 t. paprika 1/8 t. black pepper 1/2 t. Spike* (herb seasoning blend) 1 c. olive oil
You can put all ingredients into a jar and mix with a hand blender. I don't have one so here are the original instructions.
Have all ingredients at room temperature. Put egg, 1 T. vinegar, salt and seasonings into blender container. Cover and process at slow speed. Pour in half the oil very slowly. Add rest of the vinegar and remaining oil, again very slowly. You may need to push mixture into blades with a scraper. Keeps well in frig in covered container about a week.

Delicious I'm sure. We also make it with chicken, almonds, halved grapes, (celery depending on who's eating it) mayo, and a touch of sweetener and white pepper if you have it.
We eat it by itself and inbetween two slices of wheat bread (not toasted). It's very satisfying.
