I'm making dry pretzel sticks today. Because it's only 80 degrees out.
poaching liquid: 1/2 cup baking soda baked at 250 degrees F for one hour Added to 1/4 cup of brown sugar Added to 2 quarts of water
Beaten egg with 1 T water for brushing onto the sticks Large granules of salt for sprinkling over the brushed sticks before baking.
Dough: 3 cups of flour (w/or w/o gluten added) and partially bread flour 1 t. yeast 1 t. salt 1 cup of warm water
Make the dough, let it rise one hour. Then form into 24 sticks on parchment. After they rest a few minutes, make them stretch a little longer. Then simmer the poaching liquid and put the sticks in for 15 seconds, and back to the parchment ( did 4 at a time). Then brush with the egg wash, sprinkle with salt. Bake for up to an hour at 350 degrees F.
(the recipe has comments on how to make them better, lower temperature, longer cooking)
EDIT: the lower temperature is better but once they turn brown, it might be worth turning the oven down to 275 degrees F because they will get too brown at the higher temp and it takes a LONG time to get them dry, like an hour and a half.
