I'm going to be pressure canning some squat 8 oz jars. I can fit 9 comfortably in the bottom and 10, almost. I'd like to be able to can two levels of these, so 18 or so jars.
What can I use to put between the levels, if anything. A plate?
And the level of the water, should it come up to the second level, over the first set of jars, or should the level be under the top of the first set of jars?
Anyone?

Use the same level water as a single stack of jars.
You'll want the separator between the stacks to allow vapor circulation so I wouldn't use a plate. A wire rack or a layer of jar rings work well.

Oh thank you! For both answers. I'd forgotten how well jar rings work for other things besides putting them on jars.

You can even cut a round piece of ½" hardware cloth to just fit the diameter of the canner. Or, have an old rounf bird cage? Bottom of that may already be right size.

kkbhf, I put 9 jars in the bottom and then I only had 5 more jars on top of the rings. The rings were put across two jars, then the jars on top across 2 rings to sit stable. I was a little worried they might move around but nothing moved at all! Now, a day late and a dollar short, I was thinking this morning, I could have probably snipped the corners of one of my sushi mats and used that. I boil them to sanitize them. They have space between the bamboo slats for vapor/air flow. It would roll up for easy small storage. I had a full large paper grocery bag of green peppers, big ones. I was able to fit about 2 peppers (not seeds or core) in each 8 oz jar once they were softened.

I found some interesting ideas on things that work for multilevel canning.
You can also stack in a water bath canner as long as the water goes over the top of all the jars.
Another way to stack jars in a pressure canner is to put a towel in the bottom of the canner and use the rack between the layers.
