At times cookies come out hard as a rock. Full understand if left in the oven too long will cause this to happen, but what might be another reason? Is one ingredient over another better, ie, margarine over butter, or the other way around. Thanks!

farmerjack, I prefer butter. Also I typically bake at 325° rather than 350°. Remove from baking sheet quickly because the cookies continue to bake on the sheet. To soften cookies, place in an airtight container with a piece of an apple. Don't refrigerate baked cookies if you can help it, the cold can cause the sugar to crystallize and get hard.

I love cookies, but after a couple of days they are hard and taste stale. Use good ingredients, air tight containers. What am I doing wrong?
