I made the hominy salad this evening .
I only used one can of the yellow hominy this time since I wanted to tweak it .. I rinsed it very well since I didn't want any of the starch in this salad . I had some orange sweet peppers in the freezer ..and used some of the walking onion tops as well as grape tomatoes... some minced garlic... a little greek seasoning and celery seed. I added some lime zest ..a little S&P and let it rest while I made the vinaigrette with a little olive oil ..rice wine vinegar and a teaspoon of sugar .. I made sure to mix the dressing well and then stirred it and let it rest in the fridge for an hour .
Oh My Goodness!!
It is awesome good and will be a family favorite this summer...
Neighbor girl has already requested a small bowl to take for her Dad to try since he is a past customer and is always requesting some of my dishes for his company get togethers ...
Next up is finding my old recipe for Copper Pennies and seeing if it can be canned for my pantry shelf ..

That sounds pretty good AM! I'm definitely going to have to give hominy another try. I think we must be in the same age range, you keep bringing up stuff I haven't even thought of since I was a kid, lol!

I'm in my late 50's ...
I started cooking for my family at a young age because my Mom was a single woman who had to work 3rd shift and who was also a terrible cook among a family of awesome prize winning county and state fair cooks..
At around the age of 10 I got tired of bologna sandwiches and tomato soup ..oatmeal and toast .. and hamburger helper and learned to cook so my little brother and sister and I could eat something different once in a while...
I have a few more recipes to jog your memory with coming up ...LOL

I'm in my late 50s too, and we DID have a similar upbringing, lol. My dad died when I was five and my sister was 12, and my mom only had an eighth grade education, so she always worked two or even three jobs. She wasn't the greatest cook either, though there were a couple of things she did well. My sister never learned to cook and could burn water until the day she died, lol. Luckily, my grandma started to teach me to cook from the time I could understand what to do with a spoon, when I had to stand on a kitchen chair to be able to see and work on the kitchen counter and stove. I developed my love of cooking from her...and sheer necessity, lol! I look forward to other memory jogs from you any time!

That really does sound good . I love hominy but hubby doesn't ....maybe he would like this....keep the recipes coming...I am not far ahead of you two , I am 65.....but unlike you my Mom was a Great cook and so were both my grandmothers ..... bopeep
