How do you fix this. I bake; then add butter. Trying to get away from oil and sugar.

Acorn squash and other pumpkin like squashes and sweet potatoes have natural sugars in them. If you roast or lightly fry them the natural sugars caramelize on the surface and it gives them a really nice flavor and texture. Try browning them lightly by roasting or frying.
I especially like them roasted with root vegetables like onions, carrots, turnips, and radishes. Just coat them thinly with oil, roast at 350 degrees F until they begin to brown.

Bake whole with a stab for steam. This keeps the moisture in. No butter required.

Are sweet potatoes peeled before roasting? If so, wondering how I'll do that? Not a lot of strength in my hands.

Are sweet potatoes peeled before roasting? If so, wondering how I'll do that? Not a lot of strength in my hands. Either way, peeled or not peeled, your choice. I tend to not peel until I have it on my plate and I just scoop out the inside with a spoon.

Well, you can just roast them whole, or go for browning by putting a little oil on foil beneath a cut portion, or follow directions on the link, roast them hot (400 or 425) to bring out the natural sugars. Whatever you do, make sure something (foil or parchment) is under them, as this sweet syrupy liquid comes out and can make a mess of the oven if you don't.

Bake cut side down till slightly under done. Turn cut side up and stuff them with your favorite stuffing, I use a bread stuffing. Bake until tender and stuffing is done. You can dot with butter before the final baking if you want to.
