My wife took a sushi making class last night. The photo below is of her first attempt at making vegan sushi. The class, of course, discussed making all types of sushi including those using raw fish. She said it was a bit messy but it is delicious! Just sushi rice, Nori (seaweed) or Turmeric soy wrappers (yellow), with random mixes of avocado, Sriracha, cucumber, green onions, roasted red peppers, and roasted Portabella mushrooms. Served with a side of Wakame seaweed salad, pickled pink ginger and wasabi. Me (who swore I would NEVER eat sushi) loved it! This is going to become a standard meal around our house.

Being allergic to shellfish, I can only eat vegan sushi; but I enjoy it.

Here you can buy a product called Cavi-art its made from seaweed, but looks and tastes like caviar it makes a great addition to sushi

This is the first time I ever ate wasabi. WOW! That stuff will clear your sinuses out! True wasabi is both uncommon and difficult to find. I have a hint for what to use. True wasabi is grown in a bubbling creek, along the edges, difficult to cultivate. I have a hint for what to use.
Hint: Wasabi is often a mixture of ground mustard seeds and horseradish. When I tried to find some dried, powdered wasabi, it was actually ground mustard seeds and horseradish. This stuff is really good too.
It can be purchased powdered, or in a paste, sometime in tubes.
Also, the sushi pickled ginger, usually it is made from thinly shaved young ginger with pink tips, which turn it all pink. Often commercial pickled sushi ginger has pink coloring added.
You can make the pickled ginger for sushi by thinly shaving peeled ginger, then pickling it in a brine of vinegar (rice wine), sugar, and salt, and that will keep for a year in a clean jar in the refrigerator.
My youngest son was in high school, and him and I used to make a vegan sushi, and he'd take it in his lunch to school. I think he was showing off to his friends. It does travel well for a picnic or food in the car cooler.

Thank you for the advice. I'll pass it on to my better half. I do know that the wasabi that was using by the class started out as a powder.

DH was a sushi chef for several years at Otani, he really enjoyed it. The restaurant that he worked at closed down after the original owner, Mr. Honda, turned the business over to his son.
I don't eat raw fish but the vegan stuff is pretty good!

DH makes vegan sushi and it is delicious. Try a little umeboshi plum in the rolls. It is really good!

I've only found places that are out of stock or where I suspect it won't actually be wasabi. I will keep looking in the spring though, no point getting it now.
