There are things I know how to preserve and things I don't know how to preserve...which don't really need a full topic thread on them. I did some searching around to figure these first two out lately.
Avocados They go on sale and then you have too many to eat too soon. They can be frozen in chunks with lemon juice coating them, but they become mushy upon thawing, watery. So the only way I now know to preserve them, is to make a salad dressing and then freeze that. (or if you like smoothies, you can do that too) So instead of 4 avocados and 2 going in the trash, I'll have dressing later when I thaw the dressing out. win win for me.
Tofu Tofu can be frozen in slices or cubes. Since the water leaches out a bit upon thawing, they will soak up a marinade better when thawed. Tofu has little flavor of its own so this is a win win too because it needs flavor.
Walnut basil pesto This freezes great in little 1/2 to 1 cup containers.
Over ripe bananas Freeze great and they are so sweet, they work perfectly in banana bread. And they are gross to peel after thawing but you'll get over it.
Anyone have questions or observations on preserving things that we can all think out together? Oh and Happy New Year everyone.

It's not long term storage, but I've found that if you put ripe avocados in the frig, they'll stay right there for several days. It does seem impossible, but Dh won't eat them and DS may or may not eat that guacamole I make. So it's up to me to eat them/it. I wrote the grocery list, it said 2 avocados, which I can make use of over a week, but he buys 4 instead and the last two, we have no hope! What I usually do is let them get ripe, then they start going brown on the interior and it looks yuk. But I haven't invited you over to eat at my home, my mistake. Won't you be my neighbor?

I love avocados. In salads, on sandwiches, on tortillas with black beans and salsa - or any kind of taco/burrito combination for that matter. And of course, avocado toast.
Up until this year my husband swore he hated avocados. Then he started eating healthier and realized maybe he should give them a try. Guess what, he likes them. Now I have to share.
I have to tell you guys, I am SO glad I just happened to have 3 avocados in the refrigerator (I, too, store avocados in the fridge once they ripen - it really does give you extra time to eat them). After reading these posts, I was struck with an overwhelming avocado craving. So I have half an avocado, sliced, in a bowl with a bit of olive oil and a little salt and pepper, sitting next to me as I type. That'll be gone in 60 seconds. Husband is devouring the other half.
@redfish , eating guacamole by the spoonful - I totally get that. And I've totally done that - on more than one occasion.

@redfish, lol, I'm not a medical professional or anything (except the holiday in express experience), but I've never seen any medical studies of anyone ever dying from eating too much avocado flesh, ever. I'm sitting here eating some whole grained toast, with slices of avocado, and slices of tomato, and it is SO GOOD.

Ick, I have question on this thread I didn't think of. I have some 10 year old maple syrup on the shelf. I doubt it was canned with any safety. But I know honey is good on the shelf forever. So if I find no mold, on the maple syrup, do you think it is good or should I not take that chance.

I have some TVP in my preps but not a lot. I got it for adding some protein to my survival chili recipe of beans, tomato sauce, some spices and TVP. Ya, it kinda blows, but if you get hungry enough......

Both are great sites, thanks Cabin Fever for sharing them. feather , after reading your post about avocado on toast with tomatoes, I was inspired to make a similar snack - just substituted organic whole grain crackers for the toast, and sliced up grape tomatoes for the topping. You're right - it was wonderful!

Pure maple syrup will last indefinitely if not opened. If opened, must be refrigerated or frozen.
