Store-bought potatoes are not meant to be for long storage. Some may have been out of cold-storage for a month before ending up on a market's shelf. That's why they may begin to sprout after a couple weeks. But for short-term storage, just remember two things; cool and dark.

We store ours in a ventilated wooden box with a lid, but even then we don't expect them to last over a couple weeks before they start sprouting and going bad. Our worst experience has been with Walmart potatoes. I read an article a few years ago of an interview with one of the big wigs at Walmart where he discussed their problems with produce. He explained that their distribution chain was so long it was difficult for them to get the produce into the stores in a timely manner. Since reading that we've been buying potatoes and such at smaller non-big box stores with better results.

The kennebecs we grew last year are starting to sprout. They are stored at 55-60 degrees F in the basement with no sun. They are in paper bags shut. We will use them to plant next year. We used a LOT of them, but now we want to use the rest for planting, so we will buy potatoes. They don't last forever and they can't be stored too hot or too cold or with sunshine.

I store mine in a cold lower cabinet. They last weeks or maybe a month or two.
