That recipe looks so good. I have celiac disease, and it could be made GF. GF lasagna noodles are quite good, and I could use a different thickener than the 3 tablespoons flour called for. Thank you!

Do let me know how your gluten-free version comes out. What would you use to thicken it? Cornstarch? Rice flour?

I would probably use Bob's Red Mill potato starch to thicken the sauce.

I'm probably at some point going to translate this into a whole food plant based recipe for myself. I know I can get whole grained pasta. Parmesan is usually subbed out in favor of ground walnuts and nutritional yeast and salt. The sauce may be thickened with tapioca flour or rice flour, using a plant based milk. Instead of butter or oil, probably water saute, and using cashews in the plant based milk to give it some richness.
I love mushrooms, so I can see me making it. I just don't know if I'll want to share it with DH, lol.

Oh my goodness, this looks and sounds absolutely wonderful! I'll be trying this very soon, and despite my often saying that I'm genetically incapable of following a recipe as written without changing it, I can't think of one thing I'd do differently. I really can't wait to try this!
